How is craft cider made?
Like wine, cider is made by growing and harvesting fruit, then crushing and pressing it. The juice is poured into a vessel, yeast is added, and the juice is fermented so that the sugar is converted into alcohol and carbon dioxide. But unlike wine, cider has often been ignored as a serious beverage.
How much sugar for 5 gallons of hard cider?
To the cider add 1lb. of sugar per gallon for a dry hard cider (not sweet) or 1 1/2 lbs. for a sweet drink. Honey can be substituted for sugar on a pound per pound basis.
